Vegetable Medley

Ingredients

Veg

  • 2 heads of broccoli
  • 1 head cauliflower
  • 3 carrots

Cheese Sauce

  • 4 Tbs butter
  • 1/4 cup of flour
  • 2 cups milk
  • 2 cups cheese

Topping

  • 1/2 cup cheddar cheese
  • 1 1/2 cup panko bread crumbs
  • 4 Tablespoons butter, melted
  • 1/2 cup Pecorino Romano cheese
  • Pinch salt, pepper

Directions

  1. Trim and blanch veg (cauliflower, then carrots, then broccoli)
  2. Make cheese sauce and assemble topping.
  3. Toss blanched veggies with enough cheese sauce to coat.
  4. Place in even layer in greased casserole dish, top with more sauce, then toppiing.
  5. Bake at 350 for 20 minutes
