Pie Dough

Ingredients
- 2 1/2 Cups of Flour
- 1 tsp Salt
- 1 tsp Sugar
- 1 Cup of Frozen, Unsalted Butter
- 1/4 - 1 Cup of Ice Water - just enough to bring the dough together.
Directions
- Combine flour, salt, and sugar in the bowl of a food processor and pulse to combine.
- Add butter chunks and process until it resembles coarse meal - 15 seconds or more.
- With the machine running, add enough ice water until the dough holds together
- Divide and chill for 1 hour.
ATK All Butter Crust
Ingredients
- 3 Tbs Sour Cream
- 1/3 cup ice water
- 2 1/2 cups of all purpose flour
- 1 Tbs sugar
- 1 tsp salt
- 2 sticks of unsalted butter cut into 1/4 inch pieces, and frozen for 15 minutes.
Directions
- Mix water and sour cream in a small bowl.
- Combine flour, sugar and salt in the bowl of a food processor and whiz for 5 seconds to mix.
- Add butter to food processor and pulse until pea sized pieces of flour remain.
- Add half of the liquid and pulse 3 times.
- Scrape the sides. add the rest of the liquid and pulse 3 more times.
- Take clump of pie dough and squeeze it together - if does not form cohesive clump add some more liquid.
- Pour onto plastic wrap and shape into a disk, cut in half and form 2 4 inch disks. Wrap in plastic and chill in fridge for 1 hour.
- TIP: Use tapered end of pin and spin dough to maintain circle shape.
