Ingredients

  • 2 1/2 Cups of Flour
  • 1 tsp Salt
  • 1 tsp Sugar
  • 1 Cup of Frozen, Unsalted Butter
  • 1/4 - 1 Cup of Ice Water - just enough to bring the dough together.

Directions

  1. Combine flour, salt, and sugar in the bowl of a food processor and pulse to combine.
  2. Add butter chunks and process until it resembles coarse meal - 15 seconds or more.
  3. With the machine running, add enough ice water until the dough holds together
  4. Divide and chill for 1 hour.

ATK All Butter Crust

Ingredients

  • 3 Tbs Sour Cream
  • 1/3 cup ice water
  • 2 1/2 cups of all purpose flour
  • 1 Tbs sugar
  • 1 tsp salt
  • 2 sticks of unsalted butter cut into 1/4 inch pieces, and frozen for 15 minutes.

Directions

  1. Mix water and sour cream in a small bowl.
  2. Combine flour, sugar and salt in the bowl of a food processor and whiz for 5 seconds to mix.
  3. Add butter to food processor and pulse until pea sized pieces of flour remain.
  4. Add half of the liquid and pulse 3 times.
  5. Scrape the sides. add the rest of the liquid and pulse 3 more times.
  6. Take clump of pie dough and squeeze it together - if does not form cohesive clump add some more liquid.
  7. Pour onto plastic wrap and shape into a disk, cut in half and form 2 4 inch disks. Wrap in plastic and chill in fridge for 1 hour.
  8. TIP: Use tapered end of pin and spin dough to maintain circle shape.
