Chicken And Sliders
Based on Cook's Country Chicken and Pastry
Ingredients
Sliders
- 1 1/2 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 Tbs melted butter
- 1/2 cup milk
Chicken
- 5 or 6 chicken thighs
- 1 Tbs butter
- 4 cups of chicken stock
- 1 cup of water
- 1 rib of celery
- 1 onion
Directions
- Combine all slider ingredients in a bowl and stir until it comes together.
- Dump it onto a floured counter and work it unitl it comes together in a ball.
- Let rest, covered for at least until the chicken thighs are ready, up to 1 day.
- Pat Chicken thighs dru and season with pepper.
- Melt 1 Tbs butter in a dutch oven, and cook chicken thighs on med high for about 5 minutes per side (start skin side down).
- Add stock, water, celery and onion and simmer for 25 minutes.
- Cut the heat, discard the onion and celery. Transfer chicken to a plate.
- Roll the pastry out 1/8 inch thick.
- Cut in 1" diamonds
- Bring broth back to a boil, add pastry and lid, cook for 15 minutes on low.
- Meanwhile, shred chicken, discard skin.
- Add back to broth to warm and serve."
