Pumpkin Pie

This recipe makes 2 pies:

Ingredients

  • 2 Homemade, unbaked pie shells.
  • 4 Eggs
  • 1 Can E. D. Smith Pure Pumpkin
  • 2 Cups Brown Sugar
  • 2 tsp Ground Cinnamon
  • 1 tsp Ground Nutmeg
  • 1/2 tsp Fresh Ground Ginger (Freeze a knob of ginger, grate on rasp)
  • 1/2 tsp Salt
  • 1 Can Evaporated Milk

Directions

  1. Beat eggs, then add everything else but the milk. Stir to combine, then blend in milk.
  2. Divide filling in half (approx. 3 1/2 cups per pie) and pour in pie shells.
  3. Bake at 425 for 15 mins.
  4. Reduce heat to 350 and continue until an inserted knife comes out clean (about 30-35 mins).
