Ground Beef Chili

Ingredients

Chili Powder

  • 6 Ancho chiles:
  • 1 ounce tortilla chips
  • 2 Tbs ground cumin
  • 1 Tbs paprika
  • 1 Tbs garlic powder
  • 1 Tbs ground coriander
  • 2 tsp dried oregano
  • 2 tsp ground black pepper
  • 1/2 tsp dried thyme

  • Get rid of stem and seeds from Anchos and tear into 1 inch pieces.

  • Toast for 4-6 minutes med-high heat until you can smell them.
  • Move toasted chilies to food processor to cool until crisp.
  • Add the other ingredients and process for 2 mimutes.
  • When done, process tomatoes in unwashed bowl.

Beef

  • 2 lbs of 85 percent lean ground beef (ground chuck)
  • 2 Tbs water
  • 1 1/2 tsp salt
  • 3/4 tsp baking soda

  • Whisk water, salt and baking soda together and toss with beef.

  • Let sit on counter for 20 minutes.

Chili

  • 1 Tbs veg oil
  • 1 onion chopped
  • 3 minced cloves of garlic
  • 2 minced chipotle peppers
  • 1 (14.5-ounce) can whole peeled tomatoes, processeed in food processor.
  • 2 c of water
  • 15 ounce can of pinto beans and liquid
  • 2 tsp sugar

  • Let sit uncovered for 10 minutes, leave fat and stir it in.

  • 2 Tbs of cider vinegar and salt to finish.
  • Garnish with cilantro, minced red onion, shredded cheese, diced avacado, sour cream and lime juice.

Directions

  1. Add onion to oil and cook over med high heat until soft, 4-6 mins
  2. Add garlic and and cook for another minute
  3. Add beef and break up and cook until browned, 12 - 14 minutes
  4. Add spice mix and chipotles, stir to bloom
  5. Add tomatoes, beans, water, sugar and stir.
  6. Bring to simmer, add lid and cook in oven at 275 for 1 1/2 to 2 hours
  7. Let sit uncovered for 10 minutes, leave fat and stir it in.
  8. 2 Tbs of cider vinegar and salt to finish.
  9. Garnish with cilantro, minced red onion, shredded cheese, diced avacado, sour cream and lime juice.
