Mustard Sauce

Particularly good for pork tenderloin.

Ingredients

  • 1 - 2 Finely chopped shallots
  • 2 Tbs butter
  • 1/2 cup chicken stock
  • 1/4 cup Dijon Mustard
  • 2 Tbs heavy cream
  • 2 tsp fresh lemon juice

Directions

  1. Cook shallots in butter over moderate heat until shallots are softened.
  2. Add stock and deglaze for 2 minutes.
  3. Add mustard and cream, return to boil and add lemon juice and simmer until thickened.
