Chicken Satay
Dinner With Julie - Chicken Satay With Peanut Sauce
Ingredients
- 1 1/2 lbs. skinless, boneless chicken breasts or thighs, or pork tenderloin (1-2), cut into strips
- 1/2-1 cup plain yogurt or buttermilk
- 2 garlic cloves, crushed
- 1 Tbsp. grated fresh ginger
- 2 Tbsp. soy sauce
- 1 Tbsp. honey or brown sugar
- 2 tsp. curry paste or powder
Directions
- Cut uniform strips and place in a bag with the marinade.
- Refrigeate for at least an hour or overnight (or freeze for up to 4 months)
- Skewer, grill and serve with peanut sauce.
Peanut Sauce
Ingredients
- 1/3 cup peanut butter
- 2 Tbsp. soy sauce
- 2 Tbsp. brown sugar or honey
- 2 Tbsp. rice vinegar or lime juice
- 1 garlic clove, crushed
- 1-2 tsp. grated fresh ginger
- 1 tsp. sesame oil (optional)
- 1/4 – 1/2 tsp. curry paste (optional)
- water or coconut milk, to thin it out
Directions
- Combine all the ingredients in a blender or jar and whiz, whisk or shake until smooth.
