Dinner With Julie - Chicken Satay With Peanut Sauce

Ingredients

  • 1 1/2 lbs. skinless, boneless chicken breasts or thighs, or pork tenderloin (1-2), cut into strips
  • 1/2-1 cup plain yogurt or buttermilk
  • 2 garlic cloves, crushed
  • 1 Tbsp. grated fresh ginger
  • 2 Tbsp. soy sauce
  • 1 Tbsp. honey or brown sugar
  • 2 tsp. curry paste or powder

Directions

  1. Cut uniform strips and place in a bag with the marinade.
  2. Refrigeate for at least an hour or overnight (or freeze for up to 4 months)
  3. Skewer, grill and serve with peanut sauce.

Peanut Sauce

Ingredients

  • 1/3 cup peanut butter
  • 2 Tbsp. soy sauce
  • 2 Tbsp. brown sugar or honey
  • 2 Tbsp. rice vinegar or lime juice
  • 1 garlic clove, crushed
  • 1-2 tsp. grated fresh ginger
  • 1 tsp. sesame oil (optional)
  • 1/4 – 1/2 tsp. curry paste (optional)
  • water or coconut milk, to thin it out

Directions

  1. Combine all the ingredients in a blender or jar and whiz, whisk or shake until smooth.
