Glazed Carrots

Ingredients

  • 4 or 5 large carrots, cut on the bias, 1/4" thick
  • 2 Tbsp salted butter
  • 1 cup chicken stock
  • 2 Tbsp Maple Syrup
  • 1 Tbsp Chopped fresh parsley and dill

Directions

  1. Cut carrots on a mandolie 1/4" thick.
  2. Place carrots, butter, chicken stock and maple syrup in a skillet on medium high heat and bring to a boil.
  3. Cover and cook for 5 minutes.
  4. Remove the cover and cook until most of the liquid has evaporated, another 5 minutes or so.
  5. Toss to glaze carrots, add chopped herbs, toss and serve.
